Ingredients

  • 2 medium delicata squashes (about 2 pounds), halved lengthwise and seeded

  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons honey

  • 1/2 bunch kale (5 ounces), large stems removed, cut into 1-inch pieces

  • 1 large shallot, finely chopped

  • 1 garlic clove, minced

  • 1 tablespoon red-wine vinegar

  • 1 teaspoon coarse salt

  • Freshly ground pepper, to taste

  • 1 can (15 ounces) cranberry or cannellini beans, drained and rinsed

Directions

  • Preheat the oven to 400°F (200°C). Slice the delicata squash into 1/2-inch thick rings and toss with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 20-25 minutes until golden and tender, flipping halfway through.
  • While the squash is roasting, heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the shallot and garlic, cooking until softened, about 3 minutes.
  • Add the kale to the skillet and sauté for 5-7 minutes until wilted. Stir in the red-wine vinegar and season with salt and pepper. Remove from heat.
  • In a small bowl, whisk together the balsamic vinegar and honey for the dressing.
  • In a large serving bowl, combine the roasted delicata squash, sautéed kale, and cranberry beans. Drizzle with the balsamic honey dressing and toss gently to combine.
  • Serve the salad warm or at room temperature, and enjoy!
