  • 2 teaspoons extra-virgin olive oil

  • 1 large onion, cut into 1/2-inch strips

  • 6 large assorted bell peppers, seeded and cut into 1/2-inch strips

  • 1 teaspoon sugar

  • 1 sprig of fresh thyme

  • 1 sprig of fresh rosemary

  • 1 teaspoon coarse salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 tablespoon balsamic vinegar

  • Your favorite bread or rolls for serving

Directions

  • Heat the olive oil in a large pan over medium heat. Add the onions and cook until they start to soften, about 5 minutes.
  • Stir in the bell peppers, sugar, thyme, rosemary, salt, and black pepper. Cook, stirring occasionally, until the peppers are soft and caramelized, about 25-30 minutes.
  • Once the peppers are tender, stir in the balsamic vinegar. Cook for another 2-3 minutes to allow the flavors to blend.
