Ingredients

  • 3/4 cup quinoa, rinsed

  • 4 cups skim milk

  • 1/4 cup turbinado sugar

  • 1/4 cup honey

  • 2 large eggs

  • 1/4 teaspoon ground cardamom

  • 1/2 cup golden raisins

  • 1/4 cup chopped dried apricots

Directions

  • Cook the Quinoa: In a medium saucepan, combine the quinoa and 2 cups of the skim milk. Bring to a boil, then reduce the heat to a simmer and cook for about 15 minutes, or until the quinoa is tender and most of the liquid is absorbed.
  • Mix the Pudding Base: In a separate bowl, whisk together the remaining milk, turbinado sugar, honey, eggs, and ground cardamom.
  • Combine and Simmer: Once the quinoa is cooked, stir in the pudding mixture and return to medium heat. Cook, stirring frequently, for 10-12 minutes until the pudding thickens slightly and coats the back of a spoon.
  • Add Dried Fruit: Stir in the golden raisins and chopped dried apricots. Continue cooking for another 3-5 minutes until the fruit is plump and the pudding is creamy.
  • Serve: Remove from heat and allow to cool slightly. Serve warm or chilled, as desired.
