  • 1/4 vanilla bean, split lengthwise

  • 1 star anise

  • 2 tablespoons brown sugar

  • 1 sprig fresh thyme, plus more for garnish

  • 4 ripe peaches, halved, pitted, each cut into 6 wedges

  • 4 ripe apricots, halved, pitted, each cut into 4 wedges

  • 1 cup part-skim ricotta

Directions

  • Prepare the infused sugar: In a small saucepan over low heat, combine the vanilla bean, star anise, brown sugar, and fresh thyme. Stir gently to warm the sugar and release the flavors of the vanilla and thyme. Cook for 2-3 minutes until the sugar is slightly melted and fragrant.
  • Cook the fruit: Add the peach and apricot wedges to the pan and gently toss to coat with the infused sugar mixture. Cook for 3-5 minutes, turning occasionally, until the fruit softens and becomes lightly caramelized.
  • Plate the salad: Remove the star anise and thyme sprig. Arrange the warm fruit wedges on serving plates. Spoon a generous dollop of part-skim ricotta onto each plate alongside the fruit.
