  • 1/2 medium red onion, minced

  • 4 cloves garlic, minced

  • 14 ounces (1 can) diced tomatoes in juice

  • 3 tablespoons dry red wine

  • 1/2 teaspoon dried oregano, crumbled

  • 1/2 teaspoon dried basil, crumbled

  • Coarse salt, to taste

Directions

  • Sauté the Aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the minced red onion and cook for 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.
  • Add the Tomatoes and Wine: Pour the diced tomatoes and their juice into the saucepan. Add the red wine, stirring to combine. Bring the mixture to a simmer.
