  • 2 large cucumbers

  • 3 tablespoons rice-wine vinegar

  • 1/2 cup chopped fresh dill

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 4 five-ounce salmon fillets, skin removed

  • 1/4 teaspoon freshly ground black pepper

Directions

  • Slice the cucumbers thinly and place them in a bowl. Add the rice-wine vinegar, 1/4 cup of the dill, sugar, and 1/2 teaspoon of salt. Toss to combine, and let the cucumbers pickle while you prepare the salmon.
  • In a separate bowl, mix the remaining dill, salt, and black pepper. Rub this mixture over the salmon fillets to marinate for 15 minutes.
