  • 1 large egg

  • 10 large egg whites

  • 1/3 cup fresh part-skim ricotta cheese, pressed through a fine sieve

  • 1/2 teaspoon coarse salt

  • 1/8 teaspoon freshly ground pepper

  • 1 teaspoon extra-virgin olive oil

  • 2 leaves Swiss chard (4 ounces), sliced 1/2 inch thick crosswise (about 1 1/4 cups), stalks removed and chopped into 1/2-inch pieces (about 1/2 cup)

  • 1/2 large onion (4 ounces), thinly sliced crosswise (about 1/2 cup)

Directions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Egg Mixture: In a large bowl, whisk together the large egg, egg whites, ricotta cheese, coarse salt, and freshly ground pepper until well combined. Set aside.
  • Sauté the Vegetables: In a large oven-safe skillet, heat the extra-virgin olive oil over medium heat. Add the sliced onions and chopped Swiss chard stalks, sautéing for about 5 minutes until the onions are translucent. Add the sliced Swiss chard leaves and cook for an additional 3-4 minutes until the chard is wilted.
