Ingredients

  • 1 head fennel, thinly sliced

  • 2 tablespoons extra-virgin olive oil

  • Kosher salt and freshly ground black pepper, to taste

  • 1 Meyer lemon, thinly sliced

  • 1/4 cup coarsely chopped pitted Kalamata olives

  • 1 whole mackerel (2 to 3 lbs., head off)

Directions

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Fennel and Lemon: In a roasting dish, toss the fennel slices with 1 tablespoon of olive oil, salt, and pepper. Arrange the Meyer lemon slices over the fennel. Roast in the oven for 15-20 minutes, or until the fennel is tender and slightly caramelized.
  • Prepare the Mackerel: While the fennel is roasting, rub the whole mackerel with the remaining olive oil and season both inside and out with salt and pepper.
  • Roast the Mackerel: After the fennel has roasted for 20 minutes, remove the dish from the oven and place the mackerel on top of the fennel and lemon. Scatter the chopped Kalamata olives around the fish. Roast for an additional 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Serve: Once cooked, remove the mackerel and fennel from the oven. Transfer to a serving dish, and garnish with extra fresh herbs if desired. Serve hot with roasted vegetables or a side salad.
