Ingredients

  • 2 green tea bags

  • 1/2 teaspoon salt

  • 1 tablespoon fresh turmeric, minced, or 1 teaspoon turmeric powder

  • 1 1/2 cups couscous

  • 1/4 cup freshly squeezed lemon juice

  • 3 garlic cloves, minced

  • 1/3 cup light olive oil

  • 1 cup small seedless red grapes, halved

  • 1 small cucumber, peeled, seeded, and diced

  • 3/4 cup toasted pine nuts

  • 1/4 cup fresh basil, shredded

Directions

  • Prepare the Tea: In a small saucepan, bring 2 cups of water to a boil. Remove from heat and steep the green tea bags for about 5 minutes. Remove the tea bags and stir in the salt and minced turmeric.
  • Cook the Couscous: In a large bowl, combine the couscous and the warm tea mixture. Cover the bowl with plastic wrap or a lid and let it sit for about 5 minutes, or until the couscous is tender and has absorbed the liquid. Fluff the couscous with a fork.
  • Make the Dressing: In a small bowl, whisk together the lemon juice, minced garlic, and olive oil.
  • Combine Ingredients: In the bowl with the couscous, add the halved grapes, diced cucumber, toasted pine nuts, and shredded basil. Drizzle with the lemon dressing and toss gently to combine.
  • Serve: Taste and adjust seasoning if necessary. Serve the couscous warm or at room temperature as a colorful side dish or light main course.
