2 tablespoons light olive oil
1/4 cup red onion, minced
4 cloves garlic, minced
1 jalapeno pepper, ribs and seeds removed, finely chopped
1 teaspoon minced fresh ginger
2 teaspoons curry powder
1 1/2 cups peeled, cubed (1-inch), seeded pumpkin
1 cup light coconut milk
1 cup rice milk
1 pound extra-firm tofu, cut into 1-inch cubes
1 red bell pepper, ribs and seeds discarded, cut into 1-inch cubes
1 tablespoon freshly squeezed lemon juice
Salt and pepper, to taste
1/4 cup fresh cilantro leaves, for garnish
Directions
- Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the minced red onion, garlic, jalapeno, and ginger. Sauté for 3-4 minutes until the onions are soft and fragrant.
- Add the Spices and Pumpkin: Stir in the curry powder and cook for another minute. Add the cubed pumpkin and stir to coat with the spices. Sauté for 2-3 minutes.
- Add Coconut and Rice Milk: Pour in the light coconut milk and rice milk. Bring the mixture to a simmer and cook for 10 minutes, allowing the pumpkin to soften.
- Add the Tofu and Bell Pepper: Stir in the tofu and red bell pepper cubes. Continue to simmer for an additional 8-10 minutes until the pumpkin is tender and the tofu absorbs the flavors.
- Season and Finish: Add freshly squeezed lemon juice, salt, and pepper to taste. Stir to combine, then remove the stew from heat.
- Serve: Garnish the stew with fresh cilantro leaves and serve hot. Enjoy with rice or naan for a complete meal.
