Ingredients

  • 1 (two-inch piece) fresh ginger, peeled and thinly sliced into strips

  • 1 serrano or jalapeno chile, seeded and sliced into thin strips

  • 1/4 cup sugar

  • 3 tablespoons freshly squeezed lime juice (about 3 limes)

  • 2 tablespoons low-sodium soy sauce

  • 1 package (14 ounces) extra-firm tofu, cut into 3/4-inch cubes, patted dry

  • 1 package (8 ounces) soba noodles

  • 4 ounces snow peas, thinly sliced

  • 1 teaspoon vegetable oil

  • 1 English cucumber, peeled, halved crosswise, sliced lengthwise into thin strips

  • 1/4 bunch chives, cut into 1-inch pieces

  • 1 ripe avocado, pitted, peeled, and sliced

  • 2 tablespoons sesame seeds

Directions

  • Prepare the Dressing: In a small bowl, whisk together the lime juice, soy sauce, and sugar until the sugar dissolves. Set aside.
  • Cook the Soba Noodles: Bring a large pot of water to a boil and cook the soba noodles according to package instructions. Drain and rinse under cold water. Set aside.
  • Cook the Tofu: Heat the vegetable oil in a skillet over medium-high heat. Add the tofu cubes and cook, turning occasionally, until golden brown on all sides, about 5-7 minutes. Remove from heat and set aside.
  • Blanch the Snow Peas: Bring a small pot of water to a boil, add the snow peas, and blanch for 1-2 minutes. Drain and rinse under cold water to stop the cooking process.
  • Assemble the Dish: In a large bowl, combine the soba noodles, snow peas, cucumber, chives, avocado slices, and tofu. Pour the lime-soy dressing over the top and toss gently to combine.
  • Garnish and Serve: Divide the soba noodle mixture between plates and sprinkle with sesame seeds. Garnish with the ginger and chile strips. Serve immediately.
