Ingredients

  • For the Chicken:

  • 1 pound boneless, skinless chicken breasts, cut lengthwise into 1-inch-wide strips

  • 1/3 cup fresh lime juice (from about 4 limes), plus lime wedges for serving

  • 1 jalapeno chile, chopped

  • 4 garlic cloves, chopped

  • 3 tablespoons coarsely chopped fresh cilantro, plus sprigs for garnish

  • 2 teaspoons extra-virgin olive oil

  • 1 teaspoon coarse salt

  • 3/4 teaspoon freshly ground pepper

  • For the Corn:

  • 2 ears of corn, husks intact

  • 1 bunch scallions, trimmed

  • 1 teaspoon extra-virgin olive oil

  • 1/4 teaspoon coarse salt

  • 1/4 teaspoon freshly ground pepper

  • For the Lettuce Wraps:

  • 1 avocado, cut into 1/4-inch-thick slices

  • 8 large iceberg lettuce leaves

  • For the Lime Yogurt:

  • 1/2 cup plain nonfat Greek yogurt

  • 1 tablespoon fresh lime juice

  • Freshly ground pepper

Directions

  • Marinate the chicken: In a bowl, combine the lime juice, jalapeno, garlic, cilantro, olive oil, salt, and pepper. Add the chicken strips, coat well, and let marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.
  • Grill the corn and scallions: Preheat the grill to medium-high heat. Keeping the husks on, grill the corn for 15 minutes, turning occasionally, until charred. Peel back the husks and set aside. Grill the scallions for 2-3 minutes, until charred, then chop and set aside.
  • Grill the chicken: Remove the chicken from the marinade and grill for 6-8 minutes per side, until fully cooked and lightly charred. Set aside.
  • Prepare the lime yogurt: In a small bowl, mix the Greek yogurt, lime juice, and a pinch of pepper. Set aside for serving.
  • Assemble the lettuce wraps: Cut the grilled corn kernels from the cob. Place the grilled chicken, corn, and avocado slices into the center of each lettuce leaf. Top with grilled scallions and a dollop of lime yogurt. Garnish with cilantro sprigs and serve with lime wedges.
