Ingredients

  • 4 shucked ears of corn

  • 1 sliced Hass avocado

  • 1/4 cup fresh cilantro, chopped

  • 1 tablespoon fresh lime juice

  • 1 tablespoon extra-virgin olive oil

  • 1/2 teaspoon coarse salt

Directions

  • Bring a pot of water to a boil and cook the corn for 3-5 minutes until tender. Alternatively, you can grill the corn for a smoky flavor. Remove the kernels by slicing them off the cob once cooked and cooled.
