2 tablespoons olive oil
1 pound Yukon gold potatoes, scrubbed, halved, and thinly sliced
2 carrots, thinly sliced
2 cloves garlic, thinly sliced
1 medium onion, quartered and sliced crosswise
2 links (3 ounces each) fully cooked Italian-style chicken sausage, halved lengthwise and thinly sliced
1/4 teaspoon cayenne pepper
Coarse salt and ground pepper, to taste
2 tablespoons all-purpose flour
1 3/4 cup reduced-sodium chicken broth
1 pound shrimp, peeled and deveined
1/2 cup parsley leaves, chopped
Directions
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the sliced onions and garlic, cooking until fragrant and softened, about 3-4 minutes.
- Add Potatoes and Carrots: Stir in the sliced Yukon gold potatoes and carrots, cooking for an additional 5-7 minutes, until the vegetables start to soften.
- Incorporate Sausage and Spices: Add the sliced chicken sausage, cayenne pepper, coarse salt, and ground pepper. Cook for another 3 minutes, allowing the flavors to meld.
- Thicken the Stew: Sprinkle the all-purpose flour over the mixture and stir well to combine. Gradually pour in the chicken broth while stirring to prevent lumps. Bring the stew to a simmer.
- Add the Shrimp: Once the stew is simmering, add the peeled and deveined shrimp. Cook for about 5 minutes, or until the shrimp are opaque and cooked through.
