  • 8 ounces ground beef sirloin

  • 4 ounces shiitake mushrooms, stems removed, caps coarsely chopped

  • 1/2 cup cooked brown rice

  • 4 garlic cloves, minced

  • 1 tablespoon finely grated fresh ginger

  • 2 scallions, thinly sliced

  • 1 tablespoon soy sauce

  • 1 tablespoon toasted sesame oil

  • 1/8 to 1/4 teaspoon red pepper flakes (optional), plus more for sprinkling

  • Coarse salt and ground pepper, to taste

  • 1 head Napa cabbage

Directions

  • Prepare the Filling: In a large bowl, combine the ground beef sirloin, chopped shiitake mushrooms, cooked brown rice, minced garlic, grated ginger, scallions, soy sauce, sesame oil, and red pepper flakes. Season with coarse salt and pepper to taste. Mix thoroughly until all ingredients are well incorporated.
  • Prepare the Cabbage Leaves: Carefully peel off 8 large Napa cabbage leaves and blanch them in boiling water for 1-2 minutes, or until they are softened but still firm enough to roll. Drain and pat dry with paper towels.
  • Stuff and Roll the Cabbage: Place a spoonful of the beef and mushroom filling at the base of each cabbage leaf. Roll tightly, tucking in the sides to secure the filling. Repeat with the remaining cabbage leaves and filling.
  • Steam the Rolls: In a large steamer or a deep pan with a lid, arrange the cabbage rolls in a single layer. Steam over medium heat for 15-20 minutes, or until the beef is cooked through and the cabbage is tender.
  • Serve: Transfer the steamed cabbage rolls to a serving platter. Sprinkle with extra red pepper flakes if desired and drizzle with additional sesame oil for extra flavor. Enjoy warm!
