Ingredients

  • 8 ounces cherry tomatoes, sliced

  • 1 clove garlic, thinly sliced

  • 1/4 cup chopped raw walnuts

  • 2 tablespoons torn fresh basil, plus leaves for garnish

  • 2 tablespoons extra-virgin olive oil, plus more for drizzling

  • Sea salt, to taste

  • 1 zucchini, thinly sliced lengthwise, slices cut into 1/4-inch-long strips

Directions

  • Prepare the Zucchini "Pasta": Using a sharp knife or a vegetable peeler, slice the zucchini lengthwise into thin ribbons. Stack the ribbons and cut them into 1/4-inch-wide strips to resemble pasta.
  • Sauté the Garlic and Tomatoes: Heat 2 tablespoons of extra-virgin olive oil in a skillet over medium heat. Add the sliced garlic and cook for 1-2 minutes until fragrant. Add the sliced cherry tomatoes and a pinch of sea salt. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  • Add Zucchini and Walnuts: Stir in the zucchini strips and chopped walnuts, cooking for another 2-3 minutes until the zucchini is slightly tender but still crisp. Remove from heat.
  • Finish with Basil and Serve: Stir in the torn basil and season with more sea salt if needed. Garnish with fresh basil leaves and an extra drizzle of olive oil. Serve immediately.

This Zucchini “Pasta” is a light, fresh alternative to traditional pasta, with the perfect blend of garlic, juicy cherry tomatoes, and crunchy walnuts. It’s a flavorful, healthy option that comes together quickly, making it ideal for a busy weeknight meal. Enjoy this guilt-free dish packed with wholesome ingredients.
