  • 2 tablespoons extra-virgin olive oil

  • 3 tablespoons all-purpose flour

  • 1 cup whole milk

  • 1/4 cup plus 1 tablespoon freshly grated Parmesan

  • 20 fresh sage leaves, plus 1 tablespoon chopped fresh sage

  • Coarse salt and freshly ground pepper to taste

  • 2 pounds sweet potatoes, peeled and sliced 1/4 inch thick

  • 1 head cauliflower, quartered and sliced 1/4-inch thick

  • Vegetable oil, for crisping sage

Directions

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  • In a medium saucepan, heat the olive oil over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth, cooking for another 3-4 minutes until the sauce thickens.
  • Stir in the chopped sage, 1/4 cup of Parmesan, salt, and pepper. Remove from heat and set aside.
  • Arrange half of the sliced sweet potatoes and cauliflower in the prepared baking dish. Pour half of the Parmesan sauce over the vegetables. Repeat with the remaining vegetables and sauce, ensuring an even coating.
  • Cover the dish with foil and bake for 35-40 minutes, until the vegetables are tender.
  • Meanwhile, heat a small amount of vegetable oil in a skillet over medium heat. Fry the sage leaves until crispy, about 1 minute. Transfer to a paper towel to drain.
  • Remove the gratin from the oven, uncover, and sprinkle with the remaining Parmesan. Bake uncovered for an additional 10 minutes until the top is golden.
  • Garnish with crispy sage leaves and serve hot.
