  • 2 (4-ounce) halibut fillets, skin removed

  • 1 tablespoon freshly chopped parsley

  • Lime wedges, for serving

Directions

  • Preheat the oven to 425°F (220°C). Toss the sweet potato wedges with 1 tablespoon of extra-virgin olive oil, salt, and pepper. Spread the wedges on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until crispy and golden.
