1/2 teaspoon extra-virgin olive oil
1 1/4 cups thinly sliced broccoli florets
1 scallion, thinly sliced on the bias
Coarse salt and freshly ground black pepper, to taste
1 tablespoon plus 1 teaspoon grated Parmigiano-Reggiano cheese (1/4 ounce)
1 large egg, plus 2 large egg whites
Crushed red-pepper flakes, for garnish
Directions
- Heat the olive oil in a nonstick skillet over medium heat. Add the thinly sliced broccoli florets and scallion, and season with a pinch of coarse salt and freshly ground pepper. Sauté for 4-5 minutes until the broccoli is tender but still crisp.
- In a small bowl, whisk together the egg and egg whites. Season with a pinch of salt and pepper.
- Pour the egg mixture into the skillet over the broccoli and scallion, tilting the pan to spread it evenly. Cook for 2-3 minutes, or until the edges begin to set.
- Sprinkle the grated Parmigiano-Reggiano cheese over the top of the omelet. Fold the omelet in half and cook for another minute until the cheese melts and the eggs are cooked through but still slightly soft inside.
- Slide the omelet onto a plate, garnish with crushed red-pepper flakes for a little heat, and serve immediately.
