Ingredients

  • 2 heads garlic, halved crosswise

  • 1 tablespoon extra-virgin olive oil

  • 4 cups low-sodium chicken stock

  • 8 ounces Yukon Gold potatoes, peeled and chopped

  • 1/4 cup freshly grated Parmesan, plus more for serving

  • Coarse salt and freshly ground pepper to taste

Directions

  • Preheat your oven to 400°F (200°C).
  • Drizzle the halved garlic heads with olive oil, wrap in foil, and roast for 30-40 minutes until soft.
  • In a large pot, combine the chicken stock and chopped Yukon Gold potatoes. Bring to a boil, then simmer for 20 minutes until the potatoes are tender.
  • Squeeze the roasted garlic cloves from their skins and add them to the soup. Simmer for another 10 minutes.
  • Blend the soup until smooth using an immersion blender or regular blender.
  • Stir in the freshly grated Parmesan and season with salt and pepper to taste.
  • Serve with extra Parmesan on top if desired.
