  • 1/2 small red onion, thinly sliced

  • 1 jalapeno, thinly sliced

  • 1 zucchini, thinly sliced

  • 1 cup fresh corn kernels

  • Coarse salt, to taste

  • 8 large eggs

Directions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Sauté the Vegetables: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the red onion and jalapeno, sautéing for about 2 minutes until softened. Add the zucchini and corn, and season with coarse salt. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are tender.
  • Prepare the Egg Mixture: In a large bowl, whisk the eggs together until smooth. Season with a pinch of salt. Pour the egg mixture over the sautéed vegetables in the skillet, spreading it evenly.
  • Cook the Frittata: Allow the frittata to cook on the stovetop for 3-4 minutes until the edges start to set. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is fully set and golden on top.
