Ingredients

  • One 1 1/4-pound pork tenderloin, tied with kitchen twine

  • 8 leaves fresh sage

  • Coarse salt and freshly ground black pepper, to taste

  • 1 tablespoon plus 1 teaspoon vegetable oil

  • 1 pound seedless grapes, separated into small clusters

  • 1 shallot, sliced

  • 1 teaspoon red wine vinegar

  • 2 cups cooked whole-grain couscous

Directions

  • Preheat your oven to 400°F (200°C). Rub the pork tenderloin with coarse salt, pepper, and half of the sage leaves, pressing them onto the pork.
  • In a large ovenproof skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 4-5 minutes.
  • Add the grapes, sliced shallot, and remaining sage leaves to the skillet around the pork. Drizzle with 1 teaspoon of vegetable oil.
  • Transfer the skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C). Halfway through the cooking, stir the grapes and shallots for even roasting.
  • Remove the pork from the skillet and let it rest for 5 minutes before slicing. Add the red wine vinegar to the skillet and stir the roasted grapes and shallots to coat them with the juices.
  • Serve the sliced pork tenderloin with the roasted grapes and shallots over the cooked whole-grain couscous.
