  • 1 1/2 pounds small multicolored carrots, trimmed and scrubbed

  • 1 small head garlic, halved

  • Coarse salt, to taste

  • 1 tablespoon extra-virgin olive oil

  • 3 tablespoons honey

  • 1 dried red chile, halved

  • 2 sprigs fresh rosemary

Directions

  • Preheat the oven to 400°F (200°C).
  • In a large baking dish, toss the carrots with olive oil, garlic halves, rosemary sprigs, and red chile. Season with coarse salt.
  • Roast in the oven for 20-25 minutes, until the carrots are tender and slightly caramelized, stirring halfway through.
  • Remove from the oven and drizzle the honey over the carrots. Toss to coat evenly.
  • Return to the oven for another 5 minutes until the honey glaze is golden and fragrant.
  • Discard the rosemary and red chile, then serve the carrots warm, garnished with any remaining glaze.
