Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and chopped

  • 1 small butternut squash (2 pounds), peeled, seeded, and chopped

  • 1 bay leaf

  • 5-7 sprigs fresh thyme

  • Coarse salt and freshly ground black pepper

  • 2 tablespoons unsalted butter

  • Freshly grated nutmeg, to taste

Directions

  • In a large pot, add the peeled and chopped Yukon Gold potatoes and butternut squash. Cover with water, add the bay leaf and thyme sprigs, and bring to a boil. Cook until tender, about 20-25 minutes.
  • Drain the potatoes and squash, discarding the bay leaf and thyme sprigs.
  • Return the vegetables to the pot and add the butter. Mash until smooth and creamy.
  • Season with coarse salt, freshly ground black pepper, and freshly grated nutmeg to taste.
  • Transfer to a serving bowl and serve warm. This creamy mash can be served as a dip with rustic bread or chips.
