Ingredients

  • 4 sweet potatoes

  • 1/2 cup old-fashioned rolled oats

  • 1/4 cup raw almonds, chopped

  • 2 tablespoons maple syrup

  • 1 tablespoon extra-virgin olive oil

  • Pinch of coarse salt

Directions

  • Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce them several times with a fork.
  • Bake the sweet potatoes on a baking sheet for 45-50 minutes or until tender.
  • While the sweet potatoes are baking, prepare the crumble. In a small bowl, mix the oats, chopped almonds, maple syrup, olive oil, and a pinch of coarse salt until well combined.
  • Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides with a fork.
  • Spoon the maple-oat crumble on top of each sweet potato.
  • Return the sweet potatoes to the oven and bake for an additional 10 minutes, or until the topping is golden and crispy.
