Ingredients
- 1 head cauliflower (2 pounds), cut into florets 
- 2 tablespoons extra-virgin olive oil 
- 1/4 teaspoon whole cumin seed 
- Coarse salt 
- Red-pepper flakes (to taste) 
- 1 cup low-fat plain yogurt 
- 1 tablespoon lemon juice 
- 1 head Treviso radicchio or endive, separated 
Directions
- Preheat your oven to 425°F (220°C). On a large baking sheet, toss the cauliflower florets with olive oil, cumin seeds, and a pinch of coarse salt. Spread the florets in a single layer and roast for 25-30 minutes, turning once, until golden and tender.
- Allow the roasted cauliflower to cool slightly, then transfer it to a food processor. Add the yogurt, lemon juice, and a pinch of red-pepper flakes. Blend until smooth and creamy.
- Season the dip with additional salt and red-pepper flakes to taste.
- Serve the dip in a bowl, surrounded by fresh Treviso radicchio or endive leaves for dipping.
