  • 1 bunch collard greens (12 oz), ribs removed, thinly sliced

  • 1/4 cup pine nuts, toasted

  • Grated zest of 1 lemon, plus more for garnish

  • 2 Tbsp lemon juice

  • Coarse salt, to taste

  • 12 oz farro spaghetti

  • 1/4 cup freshly grated Pecorino Romano cheese

Directions

  • Cook the Spaghetti: In a large pot of salted boiling water, cook the farro spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
  • Sauté Aromatics: In a large skillet, heat the extra-virgin olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing for about 1-2 minutes until the garlic is golden and fragrant.
  • Add Collard Greens: Stir in the collard greens, cooking for about 5-7 minutes until wilted and tender. Season with coarse salt to taste.
  • Combine Ingredients: Add the drained spaghetti to the skillet with the collard greens. Pour in the reserved pasta water, lemon juice, and lemon zest. Toss everything together to combine well.
  • Finish with Nuts and Cheese: Remove the skillet from heat and stir in the toasted pine nuts and grated Pecorino Romano cheese. Adjust seasoning if needed.
  • Serve: Plate the spaghetti, garnishing with additional lemon zest and more Pecorino Romano cheese if desired.
