Ingredients

  • 1 large onion, chopped

  • 6 carrots, chopped

  • 1/2 head celery, chopped

  • 1 head garlic, halved

  • 2 large sweet potatoes, chopped

  • 12 cups water

  • 4 cups spinach

  • 1 bunch fresh parsley

  • Coarse salt and freshly ground black pepper to taste

Directions

  • In a large pot, add the chopped onion, carrots, celery, garlic, and sweet potatoes. Pour in 12 cups of water and bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let the broth simmer for 30-40 minutes, until the vegetables are tender.
  • Stir in the spinach and fresh parsley, allowing the greens to wilt in the hot broth for about 2-3 minutes.
  • Season with coarse salt and freshly ground black pepper to taste.
  • Strain the broth if desired, or enjoy it as a vegetable-packed soup. Serve hot for a light, cleansing meal.
