Ingredients

  • 1 ripe avocado, peeled and sliced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 tablespoon olive oil

  • 1 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • Salt and freshly ground black pepper to taste

  • 8 small corn or flour tortillas

  • 1/2 cup diced tomatoes

  • 1/4 cup chopped red onion

  • 1/4 cup fresh cilantro, chopped

  • 1 lime, cut into wedges

  • Optional toppings: shredded cheese, sour cream, salsa

Directions

  • In a skillet, heat olive oil over medium heat. Add the black beans, cumin, smoked paprika, salt, and pepper. Cook for 3-5 minutes, stirring occasionally until the beans are heated through and well-seasoned.
  • Warm the tortillas in a dry skillet or microwave.
  • To assemble, place a few slices of avocado on each tortilla, followed by a spoonful of the black bean mixture.
  • Top each taco with diced tomatoes, chopped red onion, and fresh cilantro. Squeeze lime juice over the tacos for a burst of flavor.
  • Serve with your favorite optional toppings, such as shredded cheese, sour cream, or salsa, and enjoy!
