Ingredients

  • 2 cups rolled oats

  • ½ cup peanut butter

  • ⅓ cup honey

  • ½ cup dark chocolate chips

  • ¼ cup chopped almonds

  • 1 tsp vanilla extract

Directions

  • Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • For extra flavor, spread the rolled oats on a baking sheet and toast at 350°F (175°C) for 8–10 minutes. Let cool.
  • In a microwave-safe bowl, combine peanut butter and honey. Microwave for 30–40 seconds, then stir until smooth. Add the vanilla extract.
  • In a large mixing bowl, combine the oats, chopped almonds, and half of the chocolate chips. Pour the peanut butter-honey mixture over the dry ingredients and mix until well-coated.
  • Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan using a spatula or the back of a spoon. Sprinkle the remaining chocolate chips on top and press gently.
  • Refrigerate the bars for at least 2 hours, or until firm.
  • Use the parchment overhang to lift the bars out of the pan. Cut into 12 equal pieces and enjoy!
