  • 1/3 cup sugar

  • 1/2 cup whole blanched almonds, finely ground

  • 5 ounces (10 tablespoons) unsalted butter, room temperature

  • 1 1/2 cups plus 1 tablespoon all-purpose flour

  • Vanilla sugar, for rolling

Directions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the sugar and butter until light and fluffy. Add the finely ground almonds and mix well.
  • Gradually add the flour to the mixture, stirring until the dough comes together.
  • Divide the dough into small portions and shape each one into a crescent shape.
  • Place the crescents on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the cookies for 12-15 minutes, or until the edges are golden.
  • Remove from the oven and let cool for 5 minutes. While still warm, gently roll each cookie in vanilla sugar to coat.
