5 artichokes, tough outer leaves removed, stems and tops of leaves trimmed
5 lemons
2 cups tightly packed baby spinach
2 tablespoons mayonnaise
1 tablespoon finely chopped shallot
1 garlic clove, finely chopped
3/4 cup part-skim ricotta cheese
1/4 teaspoon coarse salt
1/8 teaspoon cayenne pepper
Freshly ground pepper
1/3 cup plus 2 tablespoons shredded part-skim mozzarella
1 tablespoon shredded Parmesan cheese
1 whole-wheat baguette (9 ounces), cut on the diagonal into 1/4-inch-thick slices and toasted
Directions
- Bring a large pot of water to a boil. Squeeze the juice of 4 lemons into the water and add the trimmed artichokes. Boil for 25-30 minutes or until the artichokes are tender. Drain and allow to cool slightly.
- Preheat the oven to 375°F (190°C).
- Meanwhile, in a large skillet, sauté the spinach over medium heat until wilted, then set aside.
- In a mixing bowl, combine the mayonnaise, shallot, garlic, ricotta cheese, salt, cayenne pepper, and a dash of freshly ground pepper. Stir in the spinach and chopped artichokes.
- Transfer the mixture to an ovenproof dish, and sprinkle with mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
- Toast the whole-wheat baguette slices in the oven or on a grill, then serve alongside the warm dip.
- Serve immediately and enjoy!
