Ingredients

  • 2 tablespoons unsalted butter, melted, plus 1 teaspoon unsalted butter, softened, for pan

  • 1/2 cup whole-wheat flour

  • 3/4 cup all-purpose flour

  • 1/4 cup ground golden flaxseed (from about 2 tablespoons whole)

  • 3/4 teaspoon coarse salt

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 large egg, plus 1 large egg white

  • 1/2 cup light-brown sugar

  • 1 1/2 teaspoons pure vanilla extract

  • 3/4 cup mashed very ripe bananas (about 2 medium bananas)

  • 1/2 cup walnuts (about 1 3/4 ounces), toasted and coarsely chopped

Directions

  • Preheat the oven to 350°F (175°C). Butter a 9x5-inch loaf pan using 1 teaspoon of softened unsalted butter.
  • In a large bowl, whisk together whole-wheat flour, all-purpose flour, ground flaxseed, salt, baking powder, and baking soda.
  • In a separate bowl, beat the egg, egg white, light-brown sugar, and vanilla extract until well combined. Stir in the melted butter and mashed bananas.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the toasted, chopped walnuts.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
