  • 1/2 cup canned black beans, drained, rinsed, and mashed with a fork

  • 2 whole-wheat tortillas (8-inch)

  • 1/2 cup thawed frozen spinach, squeezed dry

  • 1/2 cup shredded, reduced-fat pepper-jack cheese (2 ounces)

  • Coarse salt and ground pepper, to taste

  • 1/2 cup fresh salsa, for serving

Directions

  • Prepare the Filling: In a bowl, combine the mashed black beans, spinach, and shredded pepper-jack cheese. Season with a pinch of salt and pepper.
  • Assemble the Quesadillas: Spread the black bean mixture evenly over one tortilla, then top with the second tortilla.
