- 3/4 cup whole-wheat flour 
- 3/4 cup all-purpose flour 
- 1/2 cup plus 2 tablespoons toasted wheat germ 
- 2 teaspoons baking powder 
- 1/4 teaspoon salt 
- 2/3 cup plus 1 tablespoon brown sugar 
- 3/4 cup 2% milk 
- 1/4 cup vegetable oil 
- 2 eggs, lightly beaten 
- 1 teaspoon vanilla extract 
- 1 1/2 cups blueberries 
- 1/4 cup rolled oats 
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- Mix Dry Ingredients: In a large bowl, whisk together the whole-wheat flour, all-purpose flour, wheat germ, baking powder, salt, and 2/3 cup of brown sugar.
- Combine Wet Ingredients: In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
- Combine and Fold: Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the blueberries, being careful not to overmix.
