Ingredients

  • 3/4 cup whole-wheat flour

  • 3/4 cup all-purpose flour

  • 1/2 cup plus 2 tablespoons toasted wheat germ

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 2/3 cup plus 1 tablespoon brown sugar

  • 3/4 cup 2% milk

  • 1/4 cup vegetable oil

  • 2 eggs, lightly beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups blueberries

  • 1/4 cup rolled oats

Directions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  • Mix Dry Ingredients: In a large bowl, whisk together the whole-wheat flour, all-purpose flour, wheat germ, baking powder, salt, and 2/3 cup of brown sugar.
  • Combine Wet Ingredients: In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well combined.
  • Combine and Fold: Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the blueberries, being careful not to overmix.
  • Fill the Muffin Tin: Divide the batter evenly into the prepared muffin tin. Sprinkle the tops with the remaining 1 tablespoon of brown sugar and rolled oats for added texture and sweetness.
  • Bake the Muffins: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
