  • 1 pound boneless, skinless chicken breast halves, cut into 2-inch cubes

  • For the Tzatziki:

  • 1/2 English cucumber, chopped

  • 1/2 cup fat-free Greek yogurt

  • Salt and pepper, to taste

  • For Assembly:

  • 3 plum tomatoes, quartered

  • 1/2 small red onion, cut into 3/4-inch slices, separated into rings

  • 4 whole-wheat pitas

  • Oregano leaves, for garnish

Directions

  • Marinate the Chicken: In a bowl, whisk together the lemon zest, lemon juice, garlic, oregano, and olive oil. Season with salt and pepper. Add the chicken cubes to the marinade, coating evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to allow the flavors to meld.
  • Prepare the Tzatziki: While the chicken marinates, mix the chopped cucumber with Greek yogurt in a small bowl. Season with salt and pepper. Chill in the fridge until ready to serve.
  • Cook the Chicken: Preheat a grill or grill pan over medium heat. Thread the marinated chicken onto skewers, discarding the leftover marinade. Grill the chicken for 6-8 minutes, turning occasionally, until cooked through and golden brown on all sides.
  • Assemble the Souvlaki: Warm the whole-wheat pitas on the grill for 1-2 minutes on each side. Fill each pita with grilled chicken, tomato wedges, red onion slices, and a dollop of tzatziki. Garnish with fresh oregano leaves.
