Ingredients

  • 1/2 cup sugar

  • 4 3/4 cups blueberries (about 1 1/2 pounds), picked over and rinsed

  • 3/4 cup sweet white wine, such as Sauternes, Riesling, or Gewurztraminer

  • 2 teaspoons grated lemon zest

  • 1 1/2 teaspoons freshly squeezed lemon juice

  • 3/4 cup low-fat buttermilk

Directions

  • Cook the Blueberries: In a large saucepan, combine the sugar and 3 1/2 cups of blueberries. Add the sweet white wine, lemon zest, and lemon juice. Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for 10-12 minutes until the blueberries have burst and the mixture thickens slightly.
  • Blend the Soup: Remove the blueberry mixture from heat and allow it to cool slightly. Transfer the mixture to a blender and puree until smooth. Strain the soup through a fine mesh sieve into a large bowl, pressing to extract as much liquid as possible. Discard the solids.
  • Add the Buttermilk: Stir in the low-fat buttermilk and remaining whole blueberries into the strained soup. Cover the bowl and refrigerate the soup for at least 2 hours, or until well chilled.
  • Serve: Serve the chilled blueberry soup in bowls or glasses, garnished with extra lemon zest or a few fresh blueberries, if desired.
