Ingredients

  • 1 tablespoon rice vinegar

  • 1/4 cup blueberries (optional)

  • 1-2 sheets of nori (seaweed) for rolling (optional)

  • For the honey dipping sauce:
    3 tablespoons honey

  • 1 tablespoon lemon juice

  • 1 teaspoon water (optional, to thin sauce)

  • 1/4 teaspoon vanilla extract (optional)

Directions

  • Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a saucepan, bring to a boil, then lower the heat to simmer, cover, and cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
  • Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. Stir in the sugar, rice vinegar, and salt, mixing gently. Let the rice cool to room temperature.
  • If using nori, lay a sheet of nori on a clean, flat surface. Spread a thin layer of sushi rice evenly across the nori, leaving about 1 inch at the top.
  • Layer thin strips of mango, kiwi, strawberries, and optional blueberries along the center of the rice.
  • Roll the sushi tightly, using a bamboo mat or your hands to form a compact roll. If not using nori, simply form the rice and fruit into small rolls or cylinders with your hands.
  • Slice the roll into bite-sized pieces and arrange on a plate.
  • In a small bowl, combine the honey, lemon juice, and vanilla extract. Stir until well mixed. If you prefer a thinner sauce, add a small amount of water until you reach your desired consistency.
