Why it's better: Breast meat for lean protein, skinless for less fat.

Ingredients

  • FOR THE CHICKEN
  • 1 cup buttermilk

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper

  • 2 pounds boneless, skinless chicken breast, pounded to even thickness, cut into strips

  • 2 cups whole wheat breadcrumbs

  • FOR THE DRESSING
  • Olive oil, for drizzling

  • 1/3 cup buttermilk

  • 3 tablespoons 2% Greek yogurt

  • 1 tablespoons chives, minced

  • 1/4 teaspoon kosher salt

  • FOR SERVING
  • 4 stalks celery, cut into sticks

  • 2 romaine hearts, quartered

  • Hot sauce to taste

Directions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Prepare the Coating: In a shallow dish, combine the breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper. In another bowl, whisk together the buttermilk and beaten egg.
  • Coat the Chicken Tenders: Dip each chicken tender in the buttermilk mixture, then dredge in the breadcrumb mixture, pressing the crumbs onto the chicken to ensure an even coating. Place the coated tenders on the prepared baking sheet and drizzle with olive oil.
  • Bake the Tenders: Bake for 20-25 minutes, turning halfway through, until the chicken tenders are golden brown and crispy on the outside, and fully cooked inside.
  • Make the Herb-Buttermilk Dressing: While the chicken is baking, whisk together the buttermilk, mayonnaise, lemon juice, parsley, dill, and minced garlic in a bowl. Season with salt and pepper to taste. Chill until ready to serve.
  • Serve: Once the chicken tenders are done, serve them hot with the Herb-Buttermilk Dressing on the side for dipping.
