Ingredients

  • 1 lb. fresh ginger root, peeled and sliced thinly

  • 4 cups water

  • 2 cups granulated sugar, plus extra for coating

Directions

  • Prepare the Ginger: Peel the fresh ginger root and slice it into thin, even pieces. This ensures even cooking and a consistent texture.
  • Cook the Ginger: In a medium saucepan, bring the 4 cups of water to a boil. Add the sliced ginger and cook for 30-40 minutes until tender. Drain the ginger, reserving the water for future use (like ginger tea or cooking liquid).
  • Add Sugar: Return the cooked ginger to the saucepan and add 2 cups of sugar. Stir continuously over medium heat until the sugar dissolves and coats the ginger slices, forming a thick syrup. This should take around 15-20 minutes.
  • Dry and Coat: Using a slotted spoon, remove the ginger slices from the syrup and place them on a wire rack to cool. After cooling for 1-2 hours, coat the ginger slices with additional sugar by rolling them in a shallow dish filled with sugar.
  • Store: Store the crystallized ginger in an airtight container for up to 2 weeks. Enjoy as a snack, a topping, or even a garnish for cocktails and desserts.
