Ingredients

  • 2 seedless cucumbers (each 9 1/2 inches long), washed

  • 1/2 cup low-fat cottage cheese

  • For the Garnish:
  • Clover sprouts

Directions

  • Slice the cucumbers into 1 1/2-inch thick rounds. Using a melon baller or small spoon, carefully scoop out a small portion from the center of each cucumber slice, creating a cup. Be sure not to scoop all the way through to the bottom.
  • Fill each cucumber cup with a spoonful of low-fat cottage cheese.
