Ingredients

  • 3 medium eggplant (about 4 pounds), halved

  • 4 cloves garlic, peeled and very thinly sliced lengthwise

  • 12 1-inch pieces fresh thyme

  • 1/4 cup extra-virgin olive oil

  • Kosher salt, to taste

  • 3 tablespoons minced fresh herbs (a combination of parsley and basil)

  • 2 tablespoons fresh lemon juice

  • Freshly ground black pepper, to taste

Directions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the eggplant: Score the flesh of the halved eggplants in a crisscross pattern. Insert the garlic slices into the slits and tuck in pieces of thyme. Drizzle the eggplants with extra-virgin olive oil and season with kosher salt.
  • Roast the eggplant: Place the eggplants cut-side down on the prepared baking sheet. Roast for 40-45 minutes, or until the flesh is soft and the skin is slightly charred. Remove from the oven and let the eggplants cool.
  • Scoop and mix: Once cool, scoop out the eggplant flesh and discard the skins. In a bowl, mash the roasted eggplant with a fork until smooth. Stir in the minced fresh herbs, lemon juice, and a drizzle of olive oil. Season with freshly ground pepper and additional salt to taste.
  • Serve: Transfer the eggplant spread to a serving bowl and drizzle with a little extra olive oil if desired. Serve with crusty bread, pita, or as a dip for fresh vegetables.
