  • 1/2 cup fresh ruby-red grapefruit juice

  • 2 tablespoons white-wine vinegar

  • 2 tablespoons finely chopped fresh mint, plus 1 tablespoon whole leaves

  • 1 teaspoon sugar

  • 1 teaspoon coarse salt

Directions

  • Combine the ingredients: In a medium bowl or jar, whisk together the grapefruit juice, white-wine vinegar, finely chopped mint, sugar, and coarse salt until the sugar and salt dissolve.
  • Add the olive oil: Gradually whisk in the extra-virgin olive oil until the vinaigrette is emulsified and smooth. Alternatively, shake the ingredients together in a sealed jar for easy mixing.
  • Taste and adjust: Taste the vinaigrette and adjust the seasoning by adding more salt or sugar to balance the flavors, if needed.
