  • 1 cup mixed fresh soft herbs (sage, parsley, basil, chives), coarsely chopped

  • Kosher salt and freshly ground black pepper, to taste

  • Four 4-ounce striped bass or rockfish fillets, skin off

  • 1 egg white, lightly whisked

Directions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the herb mixture: In a small bowl, combine the chopped fresh herbs. Season the herb mixture with a pinch of salt and freshly ground black pepper.
  • Coat the fish: Pat the striped bass fillets dry with paper towels. Brush each fillet lightly with the whisked egg white, ensuring an even coating on both sides.
  • Press on the herbs: Gently press the chopped herb mixture onto both sides of each fillet, coating the fish evenly with the herbs.
