Ingredients

  • 2 phyllo sheets, covered with plastic wrap and a damp towel

  • 1 tablespoon unsalted butter, melted

  • 2 very ripe peaches, halved, pitted, quartered, and sliced 1/4-inch thick

  • 8 teaspoons light brown sugar

Directions

  • Preheat the Oven: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Prepare the Phyllo: Carefully place one phyllo sheet on the prepared baking sheet and brush it lightly with melted butter. Layer the second phyllo sheet on top and brush it with butter as well.
  • Assemble the Pastries: Cut the phyllo sheets into 4 equal-sized squares. Place peach slices on each square, leaving a small border around the edges. Sprinkle each pastry with 2 teaspoons of light brown sugar.
