Ingredients

  • FOR THE TOMATO SAUCE
  • 1/4 teaspoon olive oil

  • 1 small yellow onion, peeled and chopped into 1/4-inch dice

  • 2 cloves garlic, peeled and minced

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon crushed red-pepper flakes

  • 1 bay leaf

  • One half 28-ounce can whole peeled tomatoes, roughly chopped

  • 1/4 cup tomato paste

  • FOR THE PIZZA
  • 4 whole-wheat pita breads (each 7 1/2 inches)

  • 1 yelllow bell pepper, seeds and membranes removed, cut into 1/8-inch-thick strips

  • 3 ounces mozzarella cheese, grated

  • FOR THE GARNISH
  • Fresh basil, thinly sliced

Directions

  • Prepare the Tomato Sauce: Heat olive oil in a medium saucepan over medium heat. Add chopped onions and garlic, sautéing until softened, about 3 minutes. Stir in oregano, basil, red pepper flakes, and bay leaf. Add the chopped tomatoes and tomato paste, stirring to combine. Simmer for 15 minutes until the sauce thickens slightly. Remove from heat and discard the bay leaf.
  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Assemble the Pita Pizzas: Place the whole-wheat pitas on a baking sheet. Spread about 2 tablespoons of tomato sauce evenly over each pita. Top with the bell pepper strips and sprinkle with grated mozzarella cheese.
  • Bake: Bake the pizzas for 8-10 minutes, or until the cheese is melted and bubbly, and the edges of the pita are crispy.
  • Garnish and Serve: Remove the pita pizzas from the oven and top with freshly sliced basil. Serve hot.

This Pita Pizza is a fantastic and healthy option for pizza lovers. With a crispy whole-wheat base, flavorful homemade tomato sauce, and fresh toppings, it’s the perfect dish for a quick meal that doesn’t compromise on taste. Add some fresh basil for a burst of freshness and enjoy!
