Ingredients

  • FOR THE DIPPING SAUCE
  • 2 tablespoons mirin

  • 2 teaspoons white miso

  • 2 teaspoons grated fresh ginger

  • 1/3 cup carrot juice

  • 2 tablespoons fresh orange juice

  • 2 teaspoons low-sodium soy sauce

  • 1 tablespoon plus 2 teaspoons distilled white vinegar

  • 1/8 teaspoon red pepper flakes

  • 1/4 teaspoon sesame oil

  • 1 scallion, green part only, thinly sliced

  • FOR THE TUNA
  • 3 tablespoons unhulled white sesame seeds

  • 1 tablespoon unhulled black sesame seeds

  • 1 pound sushi-grade yellowfin tuna, cut into 4-ounce rectangular pieces

  • 1 tablespoon safflower oil

Directions

  • Prepare the dipping sauce: In a small bowl, whisk together the mirin, white miso, grated ginger, carrot juice, orange juice, soy sauce, vinegar, red pepper flakes, and sesame oil. Stir in the thinly sliced scallion. Set aside for the flavors to meld while you prepare the tuna.
  • Coat the tuna: In a shallow dish, combine the white and black sesame seeds. Press each piece of tuna into the sesame seed mixture, coating all sides evenly.
  • Sear the tuna: Heat the safflower oil in a skillet over medium-high heat. When the oil is hot, sear the tuna for about 30-40 seconds on each side until the sesame seeds are golden but the inside remains rare. Remove the tuna from the skillet and let it rest for a minute.
  • Serve: Slice the seared tuna into thin strips and serve alongside the ginger-carrot dipping sauce. Garnish with extra scallions if desired.
