Ingredients

  • 1 medium eggplant, about 1 pound, cut crosswise into 8 slices (3/4 inch thick)

  • Coarse salt

  • 2 small shallots, sliced crosswise (1/4-inch thick)

  • 1 garlic clove, minced

  • 1 tablespoon sugar

  • 3 tablespoons sherry-wine vinegar

  • 1/4 teaspoon red pepper flakes

  • 2 tablespoons golden raisins

  • 1 tablespoon capers, rinsed

  • 4 Gaeta olives, pitted and coarsely chopped

  • 1/4 cup plus 4 teaspoons extra-virgin olive oil

  • Vegetable oil, for grill

Directions

  • Prepare the Eggplant: Lightly salt the eggplant slices and place them on a paper towel for 10-15 minutes to draw out excess moisture. Pat dry with another paper towel.
  • Make the Shallot Mixture: In a small skillet, heat 4 teaspoons of olive oil over medium heat. Add the shallots and garlic and cook until softened, about 3-4 minutes. Stir in the sugar, sherry-wine vinegar, red pepper flakes, raisins, capers, and olives. Cook for another 2-3 minutes until the mixture is fragrant and well combined. Remove from heat and set aside.
  • Sear the Eggplant: Preheat a grill pan or outdoor grill over medium-high heat. Lightly oil the grill with vegetable oil. Brush both sides of the eggplant slices with the remaining olive oil. Grill the eggplant for about 3-4 minutes per side, until tender and slightly charred.
  • Assemble the Dish: Arrange the grilled eggplant slices on a serving platter. Spoon the prepared shallot, raisin, and olive mixture over the top. Drizzle with a little extra olive oil if desired and serve warm.
