Ingredients

  • 1/4 cup natural, unblanched almonds

  • 3 tablespoons extra-virgin olive oil

  • 1 small onion (about 2 ounces) or 1 shallot, thinly sliced into rounds

  • 1 pound assorted young leafy summer greens, well washed and dried

  • Coarse salt and ground pepper, to taste

  • 1 garlic clove, minced to a paste

  • 8 slices rustic bread, 1/2-inch thick and 4 inches across, toasted

  • 2 ounces firm goat cheese, cut into 8 slices

  • 2 teaspoons sherry vinegar

Directions

  • Toast the almonds: In a small dry skillet, toast the almonds over medium heat until fragrant and golden, about 5 minutes. Remove from heat and set aside.
  • Sauté the onion and greens: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onion or shallot and sauté for 3-4 minutes until softened. Add the assorted greens and cook until wilted, about 2-3 minutes. Season with coarse salt and ground pepper. Stir in the sherry vinegar and remove from heat.
  • Prepare the bread: While the greens are cooking, toast the bread slices until crispy and golden. Once toasted, rub each slice with the garlic paste and drizzle with the remaining tablespoon of olive oil.
  • Assemble the bruschetta: Top each slice of toasted bread with a slice of goat cheese. Spoon the sautéed greens mixture evenly over the goat cheese. Sprinkle with toasted almonds for added crunch.
