Ingredients

  • 4 medium sweet potatoes (8 to 10 ounces each), pricked all over with a fork

  • 2 tablespoons olive oil

  • 2 garlic cloves, thinly sliced crosswise

  • 1 bunch kale (about 1 1/4 pounds), thick stems removed, leaves torn into large pieces and washed with water left clinging

  • Coarse salt and ground pepper, to taste

  • 1 to 2 tablespoons balsamic vinegar

  • 1/2 teaspoon red-pepper flakes

  • 1 cup part-skim ricotta cheese

Directions

  • Bake the Sweet Potatoes:
  • Preheat your oven to 400°F (200°C). Place the pricked sweet potatoes on a baking sheet and roast for 45-50 minutes until they are tender when pierced with a fork. Set aside to cool slightly.
  • Sauté the Kale:
  • In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the kale to the skillet, season with salt and pepper, and cook, stirring occasionally, for 5-7 minutes until wilted and tender. Add balsamic vinegar and red-pepper flakes, and cook for an additional 1-2 minutes. Remove from heat.
  • Assemble the Dish:
  • Slice each sweet potato open and gently mash the flesh with a fork. Top each potato with a generous spoonful of the sautéed kale and a dollop of ricotta cheese. Sprinkle with extra red-pepper flakes, if desired, and serve warm.
